In the next installment of Talk Eat Laugh‘s recipe of the week they present the perfect picnic snack – cheese and chilli bites, which they sometimes use as canapes for their Supper clubs.

The next Supper Club at Dinghams Salisbury is on Saturday, June 15 at 7pm. Book in store or call 01722 506045 for a limited time offer. Menu include balsamic steak kebabs, Greek-style Halloumi kebabs (v) and Cherry tarts.

Onto the picnic – this recipe makes 10 burgers or 33 bites.

What you need:
300g soft cheese (like Philadelphia)
350g cheese sauce (bought is ok)
200g grated cheese
175g breadcrumbs
Pickled jalapenos (to taste)
Oil for frying/greasing

Preheat the oven to 180C.

Put first 3 ingredients into food processor and whizz together. If making cheese sauce from scratch, you may need extra breadcrumbs to make it thick.

Add the breadcrumbs and use scissors to chop up the jalapenos into the mixture. Mix together by hand.

Turn into a bowl and leave to stand for 5-10 minutes.

For balls, make the mixture into 30g balls and place on a greased, foil-lined baking tray. Bake in the oven for 20 minutes, turning halfway.

For burgers, make the mixture into 100g burgers and fry in a small amount of oil in the frying pan, turning as necessary until both sides are browned.
