Artisan cooking is welcomed to Wilton

Coffee Darling has had a long overdue makeover by recent new owners Lindsay and Russell Hudson. Lindsay and Russell decided to settle in Wilton 18 Months ago, after years of nights camping and serving street food from their truck at festivals.

Lindsay learnt to cook from an early age with her mother and now, Lindsay is an expert in meat, having worked in a butchers.

“We love feeding people and we are keen to provide a good eating experience,” Lindsay told Valley News. Everything is freshly-made with the best ingredients. There is no cutting corners on anything: fresh eggs from Fluffets in Fordingbridge, the best avocados from Waitrose, free-range meat directly from Blackwater Pork in Totton, Southampton.

How many cafes do you go to, where you eat sausages made by the owner, served with home-made brown sauce? Russell makes the sausages from scratch, using joints from Gloucester Old Spot pigs. He also cures and smokes the bacon.

“Knowing the farmer and the farm, I can serve the meat with a clean conscience. I’ve never seen happier pigs,” Russell said. The menu is slightly alternative without being fussy. There are the traditional meals if you want them: omelettes, pancakes, a range of ciabattas, but a must-try is beetroot and walnut pesto, avocado and feta on sourdough – perfect Summer food to have in the secluded courtyard garden.

Lindsay said “We are proud to serve food freshly-made with no preservatives and a wide choice of gluten free options. People are always surprised by the gluten free choice that we have.”
Tourists and cyclists are welcomed into the café but, most importantly, it is obviously loved by locals. Since October the owners have had themed nights, but book early as they completely sell out.

With 26 covers, there is a buzzing busy atmosphere. Last month was Latin night, introducing completely new food and flavours to Wilton. Next month is Tapas night, with large jugs of Sangria, on Friday June 29.

Lindsay and Russell are wonderful hosts, thinking ahead, sitting dog-lovers together and making sure new people to the town meet established residents. So, this month have a change of scenery, visit Coffee Darling, relax with a cup of coffee and eat delicious home-made food.
